Diwali and wedding season catering: Why guest count alone cannot decide how much food to prepare

Festive gatherings and weddings call for careful food planning, and guest count is not enough. Read on to see how menu, guest profile and live cooking help cut food wastage.

New Delhi: As festive gatherings and wedding celebrations begin, hosts often wonder how much food is enough. Planning food for an event is far more complex than estimating portions against the number of guests. In professional catering, the calculation begins with understanding the event itself: who is attending, what the occasion demands, how long it will last, what kind of menu is being served and how the food will be presented. This is why there is no single formula for determining how much food is enough.

How menu and guest profile decide food quantity

A contemporary wedding, for instance, may feature welcome beverages, fresh fruit, chaat, multiple varieties of starters, soups, international cuisine counters, Indian main courses and an elaborate dessert selection. Calculating the quantity of each dish independently can be misleading here. A guest may sample chaat, try a few starters, visit an international counter and then eat only selected items from the main course, while another may prefer traditional Indian food and skip the other counters altogether.

The clientele matters........
