New head chef at restaurant in city pub reveals ambitious plans

Ryan Lilley, is taking over the kitchen at Chop, an eatery offering an "exquisite dining experience" in the Edith Cavell pub.

The former London steakhouse head chef is launching a new menu, including pork and lamb chops, a range of smaller steaks and some "rather impressive" chicken kebabs on April 18.

But, he also wants to introduce Sunday roasts and a set menu at the site.

He said: "We are looking at getting our roast dinners up and running on Sundays very soon.

“Everything I make is from scratch, including the sauces, the stock, the bread and the pasta.

"I try to avoid wastage and use every part of an ingredient.

“Taking the reins here at Chop is a fantastic opportunity to put my steakhouse experience into action."

Mr Lilley moved to Greece around 10 years ago, where he spent a year learning about Greek cuisine.

“I'm loving working in Norwich and being back in Norfolk where I grew up, it’s great being home," he said.

Jason Hart, the landlord of the Edith Cavell, added: "I’m thrilled about the new additions to our menu and delighted to welcome Ryan as our new head chef.

"His experience in steakhouses is perfectly suited to Chop and I’m excited to see him working his craft in our kitchen”.

Chop's "showstopper" beef tomahawk and its 1.2kg Himalayan salt dry-aged on the bone sirloin will continue to be served.

The restaurant is open Thursday, Friday and Saturday evenings, with Wednesday and Sundays opening soon.
