But for Houstonians with a constant craving for ribs, boudin and brisket, there’s a whole other universe of options.

Barbecue trucks and trailers occupy food-truck parks and populate roadside lots and driveways. These are often strictly to-go operations so that you can get a quick-fix for your barbecue cravings.........
