Like many pitmasters, Starsky Smith gave names to the two offset smokers he uses to cook barbecue every Saturday in Montgomery. Emblazoned on steel plates on the side of the fireboxes are “Nanny” and “Grandad,” a tribute to his grandparents who raised him in Alabama.

“Those two were instrumental in my success where I am today,” says Smith. “If it wasn't for them, I wouldn't be here.”

His most recent success is the Southern Oaks BBQ trailer he owns and operates with his wife, Sarah, at the Local Roots event venue in this fast-growing suburb north of Houston. It’s one of the best new barbecue trailers in the greater Houston area.
