The Melty Italian Cheese Gordon Ramsay, Mary Berry, And Nigella Lawson Love

In her brand-new cookbook Mary 90, former Great British Bake Off host Mary Berry shared a poultry recipe that involved a cheese I’d never heard of.

It is a “rich cheese” that “melts over the chicken as it cooks,” the author wrote – one which could be substituted for coarsely-grated “firm brie, including the rind”.

And after a little snooping, I learned that chefs Gordon Ramsay and Nigella Lawson love the “gooey” dairy number, too.

We are talking, people, about Taleggio – the melty cow’s milk cheese with a mild flavour, pinky-taupe rind, and soft texture.

What is Taleggio cheese?

It comes from Northern Italy, BBC Food writes, and has a “fruity, creamy character”.

It can only be made in certain parts of Lombardy and Piedmont because, like Parmigiano Reggiano, it’s protected by........
