Brownstein: Chef David McMillan comes out of retirement to make good on his West Island resto pledge

He’s baaack!

After a four-year absence from the restaurant scene, one of the most legendary of Montreal chefs, David McMillan, will be back in a smock once again.

McMillan is teaming up with another of the city’s most renowned chefs, Derek Dammann (Maison Publique, McKiernan, Le 9e), to open Grille-Nature in an unlikely location, not in the city centre but in the ‘burbs, at the quaint Marché de l’Ouest in Dollard-des-Ormeaux, home to butchers, bakers and even candlestick makers. Which is precisely what McMillan and Dammann had in mind.

Grille-Nature is set to launch sometime in November and will be open from 11 a.m. to 11 p.m. daily. It will seat 40 to start. The menu will feature price points for all tastes and budgets. And the wine list will be extensive yet affordable, with offerings starting at — no typo — $25, a rarity these days.

In a series of texts with McMillan, he notes that the menu — which will be out in mid-October — will be filled with “classic market-driven hits, based on listening to people and giving them what they want.”
