I love nothing more than perfecting my roasted vegetables. Yes, I make a mean roast chicken and my spuds are to die for, but the main star of my roasts is the root veggies that add colour and fibre to my plate.
Mixed in oil, herbs, a little chilli if I’m feeling adventurous and honey for a touch of sweetness... They’re perfection. I will not pretend to be humble about my cooking when it comes to them.
